Diana Barry’s Birthday

Complete with Cupcakes.
Rather than cherry cordial.
Bethany & good husband, Nathan moved into our ward.
She the primary pianist. Me the primary chorister.
It was friendship at first note.
It’s not yet been a month, but we’ve already called each other kindred spirits. Could we be rushing into things?
Naaaah.
Diana & Anne were friends from the get-go.
And, after all, Me & Bethany both write. And graduated Class of ’94. And believe in that great instituion of holiness, BYU.
Plus, her husband has an English accent, plays basketball, and John thinks he’s grand to chum with.
Yep. We’re calling them kindred spirits.  
So that’s why we celebrated Bethany’s birthday with greatest fanfare this weekend.
Firehouse spaghetti.
Flaming Candles.
Rock Band ’til our fingers hurt.
It could be said we lit the night on

Ingredients:

For the Cupcakes:
1 1/4 c. white flour
1/2 c. cocoa powder
1 c. brown sugar
1/2 tsp. baking powder*
Pinch of Salt
1 stick salted butter
2 eggs
1/2 c. whole milk
1 tsp. pure vanilla

For the Butter Cream:
1 stick butter
1 1/2 c. powdered sugar
1 tsp. pure vanilla
1-2 T. whole milk

Directions:

For the Cupcakes:
Mix flour, powder, sugar, bp and salt in mixing bowl. Lightly beat in butter. Add eggs, milk & vanilla. Whip with electric beater until all ingredients are just incorporated.
Bake 325 degree for 18-20 minutes. When cooled, frost with buttercream
*(Low altitude add 1/2 tsp and 2 Tbsp of flour)*
NOTE: To make these puppies into vanilla cupcakes, simply replace the cocoa with an extra scoop of white flour.

For the Butter Cream:
Plop all ingredients into a bowl.
Mix with electric beater on high until supremely creamy.
(To make chocolate buttercream,
replace 1/4c. powdered sugar
with 1/4c. powdered cocoa.)
Try not to eat them all
before the kids get home.
