Quick Chick Burgers with Oven Fries

I'm an out and out Costco addict. Most weeks, all of my shopping is done there so any pretty-looking recipe that can be made from pure Costco goods is a pleasure for me. This one was cheap, too. Using the monthly coupons, I purchased the
breaded chicken tenders for a mere 8 bucks, then threw together the rest.


For Homemade Burger Rolls:
2 c. very warm water
add 2 Tbsp. yeast
& 1/4 c. brown sugar.
Mix in:
One egg
1/2 c. olive oil
1 tsp. salt
Stir In:
1 1/2 c. flour

For the Strawberry Greens:
2 c. Spinach Leaves
1 c. Sliced Strawberries
1/2 Onion, sliced

For the Peppered Home Fries:
4 big-ol' potatoes
{sliced big and fat}
1 1/2 c. olive oil


For the Burger Rolls:
The dough will be sticky.
Slowly start to add 1/4 cups of flour
until it clumps up around your spoon.
You want it to be soft. But not absurdly sticky.
Is there a happier moment?
Add flour as needed (or rather, kneaded)
until dough is bouncy.
Let rise over your preheating oven for 30 minutes or so.
Pull out racquetball sized rolls of dough.
Place on greased cookie sheet.
Let rise another 20-30 minutes.
Bake 375 until just browned.
Serve warm with cut-up chicken strips and mayo.

For the Salad:
Juice of a lemon or two
Splash of Olive Oil (not too much!)
Oodles of Kosher Salt
Smackling of fresh-ground pepper

For the Fries:
Heat olive oil on medium heat.
Once sizzling, carefully lay potatoes in oil.
Turn gently once lightly browned.
When second side is tanned up and looking purty,
transfer carefully to a wire rack
(with paper towels underneath to catch drippings).
Immediately sprinkle with
a festive confetti of
kosher-salt & cracked-pepper
