Saturday Morning Purty Potato Pie

Gather the family ’round the table for this warm & hearty breakfast. Red potatoes create a delicious “crust.” Then, Oodles of cheese and eggs finish it off flawlessy {and scrumptiously}. A side of orange juice & fresh salsa makes it all the better. Happy Breakfasting!

15 small red potatoes
Microwave until just tender (about 10 minutes). Cut into quarters. Brown in 4 Tbsp. of melted butter & 2 Tsp. of grated parmesan. Transfer to an 8×10 pan and spread evenly across.
In a bowl, combine:
12 eggs
1 c. diced ham or sausage
1 1/2 tbsp. chives
1 T. minced onion
1 t. celery salt (or just plain ol’ salt)
1/2 c. milk
1/2 c. flour
Beat all ingredients with an electric mixer, until fully incorporated.
Fold in 1 c. cheddar cheese, diced
Pour over the top of the potatoes.
Sprinkle with 3 T. grated parmesan cheese.
Bake 375 degrees for 30-40 minutes,
until center is firm and cooked through.
