You should know, then, that this week full of POM recipes is from my heart to yours. Literally. Studies show that partaking of pomegranates can actually improve the amount of oxygen getting to your heart muscle.

POM.
Autumn Butternut Squash
with POM-Pecan Streusel

2 Tbsp. butter, melted
1 tsp. salt
1 tsp. cinnamon
2 T. brown sugar
Juice of one fresh orange
4 c. butternut squash, diced
Combine above ingredients together in an 8×8 cake pan.

Streusel Topping:
4 T. butter, softened
3/4 c. brown sugar
3 T. flour
1/2 t. nutmeg
½ t. ginger
1 Tsp. Orange Zest
½ c. POM pomegranate seeds
½ c. pecans
With a fork, mix first six ingredients together. Gently mix in POM seeds and pecans. Sprinkle atop butternut squash mixture. Bake 350 degrees for 35-40 minutes, or until squash is tender.
