Midnight Munchies
Here’s the thing about caramel popcorn:
you never know when you’re going to get a hankering for it.

And, who but the very most organized amongst us, actually keeps corn syrup on hand? Not I.

That’s why I adore this popcorn my son Andrew & I created late one evening, in the throes of full caramel neediness. We phenegled until we got the ingredients and flavor just. right. and were ridiculously tickled with the outcome. A rich, vanilley caramel that’s not too hard and not too soft.

In fact, we dare say it’s the perfect, quick and simple caramel popcorn. Just like grandma used to make.

{And yes. That night, We et it all by our lonesomes. Not a smidgen left to share with the morning risers. Whoopsy daisy.}

Candy Shoppe Vanilla-Caramel Popcorn
¾ c. unpopped popcorn kernels
2 T. olive oil
Place in a large, covered pot on stovetop. Turn heat to medium high. Cook until popcorn begins popping, then popping slows down. Remove from heat. Remove cover.
1 Stick Butter
1 c. well-packed brown sugar
¼ c. Pancake syrup, like Mrs. Butterworths
Place all in pot. Stir & bring to a boil.
Stir while boiling for 1 minute.
Remove from heat and add
½ tsp. salt
1 t. vanilla
Pour over popcorn. Stir to coat.
Remove from heat and add
½ tsp. salt
1 t. vanilla
Pour over popcorn. Stir to coat.

Serve it up, Sweetheart!

So as stumbling goes, I do it a lot. I’m pretty clumsy in general. I have to say that stumbling upon your blog was delightful. I think you are super creative. You make me wish I was into cooking or taking pictures of yummy looking food and then editing those pictures so that everything had adorable faces complete with fluttery eyelashes. Either way – cooking or photo editing – cool blog.
