Looking for a quick cook? These moist little muffins are simple & snappy. In the bowl and out of the oven in about 20 minutes. Which means, more time to bask in the raw, November sun filtering through the waning ozone layer. Isn’t it loverly?

1 banana
1/3 c. oil
2 eggs
1/3 c. fresh cream
½ c. sugar
¾ c. coconut, flaked & toasted
¼ tsp. baking powder
1 ½ c. flour

Combine banana, oil, eggs, cream, sugar, and ½ c. of coconut in a large bowl. Beat with an electric mixer until mixture is smooth and creamy. Add remaining ingredients. Spoon into muffin tins. Bake 350 degrees for 15-18 minutes. Or, until centers spring back to a light touch.
