Spontaneous Sunday Brunch

I’ve spent a good hunk of my evening
organizing recipes
and crying over friends.
I have no idea how these two things go together.
Only that, after being pampered by my four favorite friends (my kids) this evening, then having my raven-haired hubby lying sick in bed, then getting a package from sister Natalie, then considering Stuffed Burgers and
Savannah and sisters-in-laws
and sisters-in-laws
and Sophistimom
and so many other kindred spirits near and far.
I got all teary and bleary.
How I love my peeps.
And though it’s not happened yet, I’m quite sure that one day, all the folks I adore will arrive unexpectedly at my doorstep on a snow-sparkled afternoon. I’ll whip together an grand buffet in four elegant minutes, with just my pantry items.
And this lip-smacking morsel will be amongst my menu.
Confettied Chicken Salad
Serves 4
1 can chicken
½ apple, diced
1 c. romaine lettuce, chopped
¼ c. onion, diced
½ c. mayonnaise
1 T. brown sugar
1 T. Fresh-squeezed orange or lemon juice
1 t. dill or 1 t. cinnamon & ginger
Combine all ingredients. Stir until fully mixed. Serve atop bread or crackers.
(If you choose to us cinnamon & ginger to flavor your chicken salad, try serving them atop a graham cracker for extra funky flavor kick).
