As much as I adore.desire.lust-after summer
I count down the final sunshine days

three
two
until one can pull out the pumpkin puree
and eat it by the mouthful.

Craving a perky topped muffin
with extra pizazz
I imagined up these precious goodies,
Ate a good many of them,
And put the rest under my pillow for
the pumpkin dream fairy.

I love when she visits.

Pumpkin Banana Pecan
Chocolate Chip Muffins

1 c. brown sugar
1/2 c. oil
2 eggs
Cream all together until fluffy.

Then add:
*
1/2 c. pumpkin puree
2 bananas
1/2 c. old-fashioned oatmeal
1 1/4 c. flour
1 1/2 T. cinnamon
2 t. baking powder
1/2 c. pecans
1/2 c. chocolate chips

Mix all together with electric beater.
Spoon into muffin wrappers.
Bake 350 degrees for 15-17 minutes
or until muffin tops bounce back to the touch.
