Pineapple-Pom Fruit Pizza

All the items in Santa’s sack can’t deliver the fresh taste, and heart-happy antioxidants that this beautiful little recipe can. If you’re looking for a quick, light fix to complement this season of celebration, look no further. These little POM pizza’s are sure to kiss your tastebuds with their festive flavor.
1 tube refrigerated sugar cookie dough
1/2 cup 100& POM Pomegranate Juice
1-8 oz. can crushed pineapple with juice
1/4 cup sugar
1 T. cornstarch
1 tub whipped topping
2 c. POM pomegranate arils

Cook sugar cookies according to package directions, being careful not to overcook. In a medium saucepan, combine POM juice, pineapple, sugar and cornstarch. Stir until mixed, then heat over medium-high heat until thickened. Allow to cool.
Prepare by spreading a small amount of POM mixture atop sugar cookies. Top with a dollop of whipped cream and POM arils. Top, if preferred, with a mint leaf.
