White Chocolate Cookies

But it was mint to be delickulable.
White Chocolate Cookies
Studded with Mint Pearlies
When I made my cookies, I rolled out the cookies, then stuck the mint pearlies on top. Next time, I’ll just dump those precious little gems right into the batter. Chocolate-chip-cookie-esque. It’s simply not possible to be content with just one in each bite. Nosiree. So, dump them in, bake them up, and let the drooling begin.

¾ c. white chocolate chips
½ c. butter
1 egg
¾ c. sugar
1 t. baking powder
½ t. salt
2 c. flour
1½ c. chocolate-mint pearls

Place white chocolate chips in a small glass bowl. Microwave for 20 seconds, then stir. Microwave an additional 20 seconds, stir. Continue until all chips are melted. Transfer to a large bowl. Add butter, egg and sugar. Beat until creamy. Add baking powder, salt, and flour. Roll into balls and place on a cookie sheet. Bake at 375 degrees for 7-9 minutes. Remove hot cookies from oven. Working quickly, press mint meltaways firmly into the center of the cookies. Carefully transfer to cooling rack and allow to cool before eating.

    Becki-The mint pearls are in the bulk section of Super Target. Do you not go by there and sneak a taste of one everytime you shop? Er–um–I don’t either. :)

    Made these today with my kiddos. Couldn’t find the mint pearlies, so we added Junior Mints to some and the little colored Kisses to the rest. The Junior Mint ones were divine!!!!!
