White Chocolate Mint Kissaways

I said it wouldn’t happen this year.
But this weekend, it did.
My immaculate kitchen countertops became cluttered
With treats and sweets
baked by merry friends.
And though I am
far too thirtysomething
to finish off an entire plate of baked goods
{like I used too}
There’s not a cookie
sitting on my countertop
Without the mark
of a moon-shaped bite
Taken lovingly from it’s
rounded head
into mine.
So now, a dilemma.
If folks are already bogged up on treats,
Whatever should I give the neighbors?

White Chocolate Mint Kissaways
The white chocolate chips give these cookies a shortbread-type texture, which pairs beautifully (and—quite deliciously—I might add) with the subtle mint flavor in the meltaways. I spotted mine in the bulk section at SuperTarget. You may have luck finding them in the wedding aisle at crafts stores, too.
¾ c. white chocolate chips
½ c. butter
1 egg
¾ c. sugar
1 t. baking powder
½ t. salt
2 c. flour
24 pastel mint meltaways
Place white chocolate chips in a small glass bowl. Microwave for 20 seconds, then stir. Microwave an additional 20 seconds, stir. Continue until all chips are melted. Transfer to a large bowl. Add butter, egg and sugar. Beat until creamy. Add baking powder, salt, and flour. Roll into balls and place on a cookie sheet. Bake at 375 degrees for 7-9 minutes. Remove hot cookies from oven. Working quickly, press mint meltaways firmly into the center of the cookies. Carefully transfer to cooling rack and allow to cool before eating.
