Chocolate-Covered Merry Cherry Bites
These deep chocolate cookies, freckled with bright red cherry chips and pure white flakes of almond are the finest way to celebrate suprises. And…SURPRISE! They don’t even actually have cherries in them.
1/2 c. butter
3/4 c. brown sugar
2 eggs
1/4 c. almond paste
1/2 c. cocoa powder
1 1/4 c. flour
1/2 tsp. baking powder
1 c. cherry-flavored chips
1/2 c. semi-sweet chocolate chunks
1/2 c. slice almonds

For the chocolate topping: 1 cup semi-sweet chocolate chunks
In a large bowl, cream butter, sugar, eggs, and almond paste together. Add remaining ingredients and beat with an electric mixer until dough is fully mixed.

Place by the spoonfuls on a cookie sheet. Bake 375 for 10-12 minutes. Remove from oven and transfer cookies to a cooling rack. Cool.

To top the cookies with melted chocolate, simply place an additional 1 cup of chocolate chunks in a large ziploc bag. Microwave until fully melted (about 40 seconds), then snip off edge of ziploc bag and drizzle melted chocolate generously atop each cookie.

Allow chocolate to harden before serving.

    Oh how I miss getting those fun Valentine cards at school :), sounds like you all had an entertaining Valentine’s! I have to say, I’d much rather receive these cookies than a box of truffles…oh chocolate covered cherry cookies!
