Dear Abby.

Abby's Bake Sale
was a glowing success.
*
The girls worked with gusto.
*
Peddling cookies, brownies,
*
And, Lemonade.
Ice cold cups of lemonade.
*
Free face painting was a real kid-pleaser, too.
*
The crowds came.
They came and they came.
Multitudes of generous well-wishers.
*
A kindly police officer,
whose 13-year-old grandaughter was just diagnosed with Ewings Sarcoma.
He tenderly offered to add Abby to their family prayers
then, bought a cupcake for $10.
*
A sixth-grade neighbor boy who stood at the street corner
waving a pink sign and hollering,
"Come to Abby's Bake Sale!"
hoping to earn a cupcake in exchange for his hard work.
We gave him two.
*
Then, there was Samantha.
who knew Abby from kindergarten
(but who hadn't known about Abby's sickness).
She arrived, pockets overflowing,
with every penny from her piggy bank
to be placed in Abby's donation jar.
Every penny.
*
A camera crew came, too.
The girls were on the 5 o'clock news.
Which was exciting.

But not as exciting
as the moment when we gathered around the kitchen table to count the total donations.
*
They'd hoped for $30.
They'd dreamed of $50.
But, tomorrow,
they'll be delivering
$375.13
to Abby.
*
$375.13 and a LOT of smiles.
*


Tiger Butter Bake Sale Bars

Pretty as a picture, these cocoa-butterscotch babies were a hot-ticket item on the bake sale table. Even better, one batch makes a boatload & they hold up well to being wrapped up in their own plastic bags. Oh, and did I mention...yum?!

3/4 c. oil
1 1/2 c. brown sugar
4 eggs
1 tsp. salt
1 1/2 tsp. baking powder
1/2 c. cocoa powder
2 c. flour

11 oz. butterscotch chips
1 c. milk chocolate chips

Set aside 1/2 c. of butterscotch chips for frosting. In a large bowl, combine oil, sugar, eggs, salt, baking powder and flour until well mixed. Add chips & stir until incorporated. Spread dough evenly across a lightly greased cookie sheet. Bake at 375 degrees fpr 18-22 minutes (or just until center has set). Remove from heat & allow to cool until warm to the touch. Cut into squares, then remove individual squares, placing each bar onto a cooling rack. Allow to cool. Glaze with ButterBaby glaze.

ButterBaby Glaze

1/2 c. butterscotch chips

1 1/2 c. powdered sugar

1/4 c. milk

Place all ingredients in a medium saucepan. Over medium-low heat, melt until all ingredients are well mixed and a smooth but slightly runny glaze has formed. (Add more or less milk, or more or less powdered sugar, as needed). Transfer to a plastic bag, seal. Cut one bottom corner off plastic bag and pipe onto cooled bars. Allow frosting to set before serving or sealing in plastic.

That just brought tears to my eyes. What a wonderful life lesson that they will take with them always. What sweet, sensitive, caring, altruistic girls you have, Brooke.....and I'm pretty sure I know where they got it from.....YOU! Love you guys.

I am new to your blog, and would love to try this recipe. Is it 1/2 cup cocoa? I didn't see a unit of measure so I wasn't sure. Is it a really thick batter?

By the way, love the whole lemonade/bake sale. My 6 year old daughter recently held one to raise money for the American Cancer Society. It's a great way to get them exposed to helping others.

What a great looking recipe!! I'm putting together a bake sale too for a friend's baby who needs a lung transplant. I'll be sure to give these a try soon to hopefully include them.
