Creamy Avocado Chicken Salad

I’m currently reading exactly five books. Some new, some reruns. I have a fervent policy to not reread a book lest it be a life-changing, worthwhile reread. I’m weird like that.

Is it just me, or is there less and less time to snuggle into a book? I plopped into bed nigh unto midnight last week and realized I hadn’t actually held a paper book in my hand for over a month. A MONTH! What sort of person allows a thirty-day stretch come between her an the musty smell of well-loved paperbacks?  Apparently, I do. Boo.

So, with 20 days left before cookbook deadline (read: NOT the time to be making mid-year resolutions), I feel to make some mid-year resolutions. For one thing, I resolve to pick up a papery book and read from it everyday. Even if it’s just a paragraph.  Even if it’s just a word. Even if I just pretend to skim the pages whilst I text Savor.

That’s where you come in. Once I get through these first five books, I need five more that are crazy-fab. Got a recommendation for a don’t-miss read? I’d love to hear.

  • 1.  How to Win Friends & Influence People, by Dale Carnegie (an absolute classic. The truest book I think I’ve ever read)
  • 2.  1984, by George Orwell (New one for me. F.R.E.A.K.Y.)
  • 3. The Happiness Project, by Gretchen Rubin (I love people who think clever thoughts, then do something about them.)
  • 4. The Hiding Place, by Corrie Ten Boom (Never anything less than inspiring)
  • 5.  The Story of Edgar Sawtelle, by David Wroblewski (One of the most breathtaking chapters I’ve ever read is in this book. It was about a dog. Really. This author is phenomenal.)

In exchange for your book brilliance, hows abouts I offer you this blessed little recipe, which is the perfect accompaniment to an afternoon of Spring reading.  The only thing that would make such a trade more fair would be if we could all kick it together at a spontaneous afternoon Avocado & Book Party. There’s just never enough of those.

Creamy Avocado Chicken Salad

The flavors of this chicken salad are reminiscent of summer grilling. If you've got a bit of leftover chicken from the night before, this is a great way to use it up for lunch. Otherwise, feel free to boil a breast of chicken or zap one in the microwave for a super-speedy meal. Enjoy!

Ingredients:

1 cup chicken breast, cooked and shredded
¼ cup corn
¼ cup black beans, rinsed and drained
¼ cup green onions, chopped
¼ cup tomatoes, diced
¼ cup cilantro, chopped
¼ cup corn chips, crushed
2 tablespoons white vinegar
4 tablespoons mayonnaise
Salt to taste
2-4 avocados, sliced in half with pits discarded

Directions:

In a medium bowl, toss the chicken breast, corn, black beans, green onions, tomatoes, cilantro, and corn chips together. Add the vinegar and mayonnaise to mixture and toss to coat. Salt to taste. Spoon salad into halved avocados. Serve immediately with a spoon and fork. Enjoy!

    The Bible King James Version only. Any other version translates certain words which alters the meaning of the scripture. But before its read, there’s some meditation involved. What I mean is just ask God for revelation and understanding everytime before opening the Bible. Everything comes to life and they aren’t just stories but instead a puzzle to the meaning of life. It can only be applicable to ourselves and life changing when reading it in the spirit, that is the meditation bit I mentioned. A leap of faith if you will. The pages go from paper to a pop up book (metaphorically) when you apply faith and meditation. And its ancient literature, ancient civilizations fascinate me. I’m studying anthropology.

    Got this recipe through my daughter-in-law after I went crazy over it. It’s awesome on lettuce, and in a sandwich with Kalamata olives too!! From a former English teacher, and book fanatic…The most life changing book I’ve read (besides the Bible) is “How to Stop the Pain” by Dr. James Richards. It changed me, and every relationship I have and made them SO much better. This book MUST be read slowly–it’s such a different perspective that it takes time for it to sink in…happy reading!

    Love the recipe…. If you want to make it even healthier, eliminate the mayo and just smash the avocado. I added a little lime juice and red pepper and DELISH!!! (I did not add the vinegar either.)

    Oh, yes! And to echo an earlier comment, “The Eyre Affair” (really, anything by Jasper Fforde, who is a witty British author). It’s the first book in a series that is a MUST for any bibilophile. Totally hilarious and awesome.

    I’ve never been too much into reading, but tried to get into it during my last pregnancy. I started 3 different books, one after the other not being able to quite get into them. Then on the 3rd book, i was hooked! I read it in 2 days! It is an amazing book called “Same Kind of Different as Me” by Ron Hall and Denver Moore. These 2 men wrote the book of their life and how a homeless man (Denver) and a millionaire (Ron) came to be best friends and how Ron led Denver to Christ. Omgoodness. This is the best book you will ever read. My husband who is not a reader what so ever, was dying to read it because i told him about it all the time. Finally, i bought him the audio CD and he listened to it entirely within 3 days! Best. Book. Ever. Just give it a shot. Its not too long of a book, but it is worth every minute. My favorite captivation of the book was how every other chapter was either Ron or Denver’s point of view on the story. Keeps it very interesting. It will make you laugh and it will make you cry. Amazing!

    This may be one of the most magnificent recipes EVER! After making it exactly according to recipe, I’m also going to try it with lime juice instead of vinegar since I’m a citrus-a-holic.
    Life changing book from a guys point of view – “Never Surrender” by LtGen (ret) Jerry Boykin. I am a bit biased since I am a conservative Christian, but there really is something to be learned for everyone. Favorite classic – “The Great Gatsby” but most book junkies have already read this one. Thanks again for the recipe.

    This recipe looks really yum yum.. I am guessing you scoop to avocado part out cause you dont want to eat the skin right! ??? he he.. I have also read the “The Hiding Place” very good indeed and right now am reading the third of “The Hunger Games” which I started a month or so ago and have not read much since. Dreadful huh.     great recipe! I have enjoyed some of the books you have read to. If you have never read “1000 one women and “The glass castle” they are good vacation books. I could not put them down. Also the painted veil would be a good book. I just saw the movie.

    Found your recipe on Pinterest – can’t wait to try it. I am not a re-reader either but I have thoroughly loved re-reading Louise Penny’s books. The first book is Still Life and each book just gets better. The mysteries are fabulous but the quality of her writing is the best ever. Very readable and yet insightful, literary, and elegant.

    Other favorites I would like to re-read are The Book Thief, The Guernsey Literary & Potato Peel Pie Society, Ship Fever, Anne Perry’s WWI series, The Poisonwood Bible. Happy reading.

    I can’t wait to try this recipe, it sounds scrumptious. I can read and re-read almost anything by Georgette Heyer, Arabella, The Grand Sophy and Frederica being my favorites. Her writing is along the lines of Jane Austen and her heroines are spunky and unexpected. I spent many an absorbed hour with Corrie Ten Boom and Frank Peretti, great books. I’ve been on a youth book kick lately, there are some great series out there right now. Fablehaven by Brandon Mull is a favorite, my husband and I just finished reading that series together, he loved it! Anything by Rick Riordan who wrote the Percy Jackson series. The Mysterious Benedict Society. And for absolute beauty of prose you can’t beat Patricia McKillip, Alphabet of Thorn is probably my favorite of hers.
    I’m off to the kitchen to see if I can scrounge up the ingredients to make this for lunch!
