Memorial Day Recipes that Rock

Three cheers for the red, white, and blue! Memorial Day weekend is finally here, kicking off the start of summertime and bringing opportunities to potluck the weekend away. If you’re looking to pull together a few totally fabu eats, here are a few of my very favorite recipes to wow a crowd. Whether you’re looking to make Tie-Dye Cupcakes or Pizza Devilled Eggs to go along with your weekend grilling, then you’re sure to find something yummy and unique for your weekend revelings. Happy Memorial Day!

Ever had Spicy Shrimp Sushi? Helloooo, delicious. Well, take that and put it into pasta salad form and you may never want to eat anything but Spicy Shrimp Pasta Salad ever again. It’s good. Like, really, really gooood.

Packing a picnic this weekend? Tote along these Perfect Egg Salad sandwiches. They are simple to make, full of family-friendly flavor, and way, way scrumptious. A nice change from the plain-old PB or hogi sandwich.

Get your main dish in on the holiday fun with this Red, White, and Blue Pasta Salad. It’s so easy because you make it entirely with a few scoops of ingredients off the grocery store olive bar. Such a snap!

You simply can’t have enough pasta salad ideas for the Memorial Day weekend. But, you definitely can’t have enough of this Ham and Fresh Corn pasta salad. It looks simple, but be warned. It’s addictive city.

Why serve your potluck people jell0 and cheesy potatoes when you can fresh it up a bit and offer a plate of Avocado Fries with Cilantro-Lime Ranch for dipping? I’m just sayin.

Kick off the weekend festivities with these fun red-white-and-blue Krispy Star Pops. My kids go gaga over these! (Okay, honest admission: So do I. :)

Take store-bought angel food cake to a whole new level with this Strawberry-Banana Nutella Shortcake. I ate everything you see in that picture. Shamelessly, entirely ate it up.

Why serve up plain old Strawberry Shortcake when you can make it bite-sized adorable with these Strawberry Shortcake Shooters?

Want a recipe so light and simple it won’t thwart your efforts to get into that itsy bitsy teenie weenie Bikini? ThisĀ Mango-Peach Sunrise Poke Cake it like eating a cloud. With peaches. And sunshine. And little white unicorns. Only, the unicorns prance out of the way before you eat them. Because, you know, that’d be gross.

These all look delicious, but I am especially loving those cupcakes. Beautifully done! Well, the pasta salad is going to be on my dinner plate ASAP, so maybe that is the one I’m especially loving.
