Nutella For Breakfast Muffins

There was a single moment today, driving in the car with the whole family, windows down, wind flying across our faces and I realized I could stay right there in that moment forever. It was simple perfection.

Why do I work so hard for the grandiose, glittering moments, with clean kitchen floors and children in matching clothing, when those are so rarely the moments that matter? It is pajama pants and wind-mussed hair, children breathing sleepily in the back seat of the car, puppy curled in the arms of an eight-year old, husband nodding to tunes on the radio that I want to pause and stop and permanently tattoo on my heart.

Over my last three years as a food blogger, I’ve watched food and photos go from the homey to the ridiculous. Nowadays we, with our visual responses and ever expanding palates, want stuffed cookies and seven colors of cake. I get more traffic on absurdly complex desserts that I do on simple, fresh, healthy foods. Count me in as part of the problem. In an attempt to keep up with the reactionary state of the web, I’ve made all sorts of absurd foods, then (gasp!) tossed them into the garbage can because my own children think they are nappy. Too much sugar. Too much food coloring. They want simple as much as my mind craves it.

So, I’m starting a 3-day green juice fast today, to combat that bloated, over-eaten feeling which comes after days and days of eating pizza and cupcakes and other such nappy treats. It’s time to reset. Time to remember what it feels like to have this body clean and simple. Have you ever green juice fasted before? Would love your insights. I’ve finished off the Master Cleanse with great results, but do NOT have it in me to drink lemonade and saline rinses for ten days straight.

And now you’re definitely wondering how I can mention green juice fasting then toss you a recipe for breakfast muffins oozing with  mound of hot Nutella? Well, I can because this idea of simplicity is totally reflected in these muffins. Simplicity of a different kind, of course. No organic kale or spicy broccoli sprouts in these muffins. Just basic ingredients that bake into lovely, nice muffins in no time at all.

Because, after all, rainbow cake is nice, but pure, plain, and totally ordinary is so much better.


Eat Nutella for Breakfast Muffins


1 egg
1/3 cup oil
1/3 cup sugar
3/4 cup flour
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon Vanilla Nut & Butter flavoring (optional)
1/2 cup buttermilk
1/2 cup Nutella
1 teaspoon coarse sea salt with 1 tablespoon sparkling sugar


Preheat oven to 350 degrees. In a large bowl, beat together the egg, oil, sugar, flour, baking powder, soda, and vanilla flavorings until smooth. Beat in the buttermilk, then spoon a small amount of the batter into the bottom of a muffin tin lined with a cupcake wrapper. Sprinkle a small amount of the salt & sparkling sugar mixture on top of each muffin.

Bake in preheated oven for 17-19 minutes, or just until the center of the muffins spring back when touched lightly with your finger. Remove and cool slightly. Use a small ice cream scoop or spoon to hollow out a teensy part of the center of each muffin. Scoop a good amount of Nutella into the center of each muffin. Eat your heart out!
