India Spiced Sweet Potato Fries

Sweet potatoes are nice.

They are nice like puppies.

They are nice like bike rides on beach cruisers.

They are nice like painted toenails and your favorite organic-cotton t-shirt.

They are nice like potatoes. Potatoes wearing prom dresses.

Sweet potatoes are just nicey. nice. nice.

Which is why you should turn a quick batch of frozen sweet-potato fries into India-Spiced Sweet Potato Fries.

Because spice is nice, too. The end.

India Spiced Sweet Potato Fries

The day sweet potato fries were made was the finest of all days, methinks. This simple spiced-curry french fry is an exciting take on the basic sweet potato fry. If you can't find garam masala, you can toss in a pinch of cardamom, but if you can hunt down a bit of that great spice, by all means, use it! It's splen.did.

Ingredients:

1 package Alexia Sweet Potato Fries
1 tablespoon coconut oil
1 tablespoon brown sugar
1/4 teaspoon garam masala
1/4 teaspoon curry
1 tablespoon finely shredded coconut
1/4 teaspoon salt

Directions:

In a small bowl, microwave the coconut oil until melted. Drizzle over frozen fries. Toss with brown sugar, garam masala, curry, coconut, and salt. Place fries on a parchment-lined baking sheet. Bake in an oven preheated to 400 degrees and bake until golden brown, about 12-14 minutes. Serve with a bit of barbecue-sauce stirred into a tablespoon or so of mayonnaise. Enjoy!
