Perfectly Simple Weeknight Clam Pasta

It’s hot outside.  Really hot. You’re playing outside. Really hard. So, who wants to come in from the bliss of summer, fire up the oven, and cook any sort of anything?

Not you.

I totally get that. I don’t want to either. So, I’ve come prepared to show you my world’s quickest, go-to recipe. It’s the perfect meal for weeknights. You can pop it on the table in 15-minutes or less. It hardly heats the kitchen up. Plus, it’s fresh tasting and just different enough from your usual fare that you’ll feel proud of your adventuresome spirit.

Look at you go, you clam-eating tiger.


15-Minute Clam Pasta


1 can minced clams, drained
1 lemon, freshly squeezed
1 clove garlic, finely minced
3 tablespoons olive oil
1/2 pack fettucine, freshly cooked
1 can diced, fire-roasted tomatoes
1/4 cup parmesan cheese
Garnish: fresh chopped parsley


In a small bowl, toss the clams, lemon juice, and garlic together. Allow it to sit for a minute. Toss all other ingredients together. Sprinkle parsley atop. Serve and enjoy.

    I don’t do seafood, however, my fiance LOVES it! I am always looking for quick, easy, and delicious ways to prepare it for him!

    I made this last night and it was good. I used two cans of clam (for extra protein) and some fresh spinanch I had on hand. Even the kids enjoyed.

    I have a husband who HATES tomatoes, so this recipe isn’t really an option for a family dinner. :( However, you did inspire me to find a clam sauce to serve with spaghetti!
