Perfectly Simple Weeknight Clam Pasta
It’s hot outside. Really hot. You’re playing outside. Really hard. So, who wants to come in from the bliss of summer, fire up the oven, and cook any sort of anything?
I totally get that. I don’t want to either. So, I’ve come prepared to show you my world’s quickest, go-to recipe. It’s the perfect meal for weeknights. You can pop it on the table in 15-minutes or less. It hardly heats the kitchen up. Plus, it’s fresh tasting and just different enough from your usual fare that you’ll feel proud of your adventuresome spirit.
Look at you go, you clam-eating tiger.
15-Minute Clam Pasta
There are all the right flavors here. I love this basic pasta. Better yet, most of these ingredients will sit on your pantry shelves until you need them, so you can purchase everything you need to make this recipe, then leave it be until the time comes to whip it up. If you really like the flavor of clams, don't drain your juice. For a less fishy flavor, just follow the recipe below. And, if you're in a real hurry, try making this recipe with fresh fettuccine. You'll be able to find it in the refrigerated section of the grocery store. It takes just minutes to cook up and cuts the prep time in half while lending a softer texture to the final meal.
1 can minced clams, drained
1 lemon, freshly squeezed
1 clove garlic, finely minced
3 tablespoons olive oil
1/2 pack fettucine, freshly cooked
1 can diced, fire-roasted tomatoes
1/4 cup parmesan cheese
Garnish: fresh chopped parsley
In a small bowl, toss the clams, lemon juice, and garlic together. Allow it to sit for a minute. Toss all other ingredients together. Sprinkle parsley atop. Serve and enjoy.
