Quick! What do you make when you have six teensy potatoes and a bungle of almost-expired asparagus?
Well, gracious, darlin. You make these simple pizzas which at first cause your children to snub their noses. Then cause your children to sniff and proclaim how lovely they smell. Then entice them to the table with curious glances and questions of wonder, “when will those things be ready?” they will say.
And you turn and kiss them on the nose as say. “Soon. Very, very soon.”
But they don’t get a bite until you get a bite. A hidden bite that no one sees you take. Because if they saw you take that bite, they’d want a bite. And then another one. And then another one. And there’d be nothing left for dinner.
Which, frankly, after you start with that first sneaky bite, there may be nothing left for dinner anyway. Cause, wow. Two bites, now maybe three, make for much more educated taste testing.
Four. Five. Gulp.
Potato and Asparagus Pizza
This is one of those last-minute dinners that you can pull together in minutes. It's the perfect combination of savory and creamy and comforting. Just the way to end any day, but especially one of those day's when everyone is really, really hungry and waiting to be wowed.
Ingredients:
6 small baby red potatoes
1 tablespoon olive oil
1/2 pound asparagus
2 cloves garlic
4 pieces naan bread
1 cup ricotta cheese
2 tablespoons bacon bits (optional)
kosher salt & fresh ground pepper
1 cup asagio cheese
1 lemon, sliced into four piecesDirections:
Preheat your oven to 400 degrees.
Pierce your potatoes with a fork, then pop them into the microwave for 3 minutes or so. Cook just until soft. Slice into thin slices.
In a medium skillet, heat olive oil over medium-high heat and toss the potato slices into the hot oil. Cook until golden browned, then toss in the garlic and asparagus. Cook for just a minute, until the asparagus is slightly softened.
Spread ricotta cheese over each slice of the naan. Top with potatoes and asparagus. Sprinkle bacon bits, a bit of salt and pepper, and asagio cheese on top. Bake in preheated oven for 10-12 minutes, or until the cheese is melted and golden-ish around the edges.
Remove pizzas from the oven and squirt lemon juice over them before serving. Enjoy!
