Gooey Chocolate Cheesecake Brownie Bites

Girls, you really do beat all.
If I had a penny for every one of you who has emailed me asking for more desserts (you naughty lil’ minxes, you!) and to bring back the funky little faces I once foreverlongago drew on my food, I’d be a rick chicken, indeed.
So, let’s have a chat, shall we? Here I present to you decadant, gooey, wildly scrumptious Chocolate Cheesecake Brownie Bites with the nicest little crunch to the crust and a hefty amount of mushy chocolate on the inside. Satisfied? I should hope so.
But the faces on the pictures? Really? We don’t really want to bring those back, do we? For one thing, they were so silly. For another thing, they were soooo silly.

If you, like me, are content to live in Cheeky Kitchenville without the photos, then don’t comment, flee to your kitchen and please for the love of all that is holy, make these brownie bite thingys.

They were supposed to be muffins. We made them for breakfast. But, good gracious. These things are not breakfast muffins. Unless you eat dessert for breakfast. With caramel and ice cream. In which case, breakfast is ready for your enjoyment.

Gooey Chocolate Cheesecake Brownie Bites
With the finest crispy crust on top, and a sweet gooey center, these little brownie bites are kinda like chocolate lava cakes, only a heck of a lot less finicky. Serve them warm, straight out of the oven. Or, if immediate serving is deemed impossible, by all means microwave them until warm and chocolately.
Ingredients:
2 eggs
4 tablespoons cream cheese
3/4 cup organic sugar
1/3 cup coconut oil, melted
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cocoa powder
1/2 cup spelt flour (or plainy plain plain flour)
1 1/2 cups semisweet chocolate chipsDirections:
In a stand mixer, combine the eggs, cream cheese, sugar, and coconut oil. Add the baking powder, salt, cocoa powder and spelt (or plain flour or white whole wheat flour. It'll all work beautifully.)
Bake in an oven preheated to 350 degrees for 16-18 minutes, or JUST until the center of your muffins is set. Serve topped with ice cream and all your favorite sweet stuff.

umm . . . this recipe looks really great, but i think it would look even greater if there were little cartoon eyes and a sweet smile stuck on it. ;)

Hmmm, hard choice. The smiley faces at least. Making these things is an easy choice. Looks great. Smiley faces were silly but cute and very unique…. and in the end isn’t that what we all want, to be unique.
