Minny’s Chocolate Pie

Ever since I gone done went and watched The Help, I’ve wanted that pie. Not THAT pie, you know. Not the one Hilly licked her fingers all over, just before learning about the Terrible Awful. But the one that Cecilia tried to share with those dagblummed society girls when they went all up and hid their faces from her. I just wanted to take her into my house, pull out a fork, and eat that pie with her.
And so, we made the pie. You know that scene when the Terrible Awful goes down in the movie, and Hilly is saying, “what.do.you.put.in.this.to.make.it.so.good.Minny?” Well, we put some of the good Mexican vanilla, and a bit of brown sugar, and a scoop of instant cappuccino mix, which so oomphs up the flavor, you don’t need anything else.
We served the pie tonight to our neighbors. Good neighbors. Favorite neighbors. So there was no need for the Terrible Awful. We all sat around humming at our forks and licking our fingers and digging in for seconds and we dug into delicious conversation and hilarious retellings of stories and the like. It was anything but terrible. Anything but awful.

This pie bakes into a sweet (but not too sweet!) soft (but not too soft!) chocolately (perfectly chocolatey!) filling. Fresh whipped topping is an ideal addition to the mix. Just sweet enough and creamy enough to offset the richness of the chocolate pie.

We made ours into several mini pies and one deep dish pie, and the deep dish was by far my favorite. Having miles of that chocolatey filling is about as dreamy as anything I can imagine. Including a bubble bath. Including foot massage. Including nice neighbors. Okay, maybe not as dreamy as having truly fabulous neighbors. But, you know. Close.

Minny's Chocolate Pie from 'The Help' by Kathryn Stockett
Ingredients:
2 cups brown sugar
2 cups mini chocolate chips, melted until smooth
1/3 cup butter, melted
2 tablespoons Mexican vanilla (or pure vanilla extract)
2 tablespoons instant coffee or cappuccino drink mix
2/3 cups evaporated milk
3 eggs
1/4 cup flour
pinch of salt
1 deep dish pie crust (or 4 premade pie crusts pressed into 12 mini tart pans)For the whipped cream:
1 pint heavy whipping cream
1/2 cup powdered sugarDirections:
Preheat oven to 400 degrees.
Place the brown sugar, melted chocolate chips, butter, vanilla, instant coffee, evaporated milk, eggs, flour, and the pinch of salt into a blender. Blend until smooth, then pour into a deep dish pie crust or 12 mini tart pans.
Transfer to oven and immediately turn the oven down to 325 degrees. Cook mini tart pies for 18-24 minutes, or until the center of each pie is set, bake deep dish pie for approximately 45-50 minutes, or until the center of the pie is set.
In a stand mixer, beat the heavy whipping cream until soft peaks form. Add the powdered sugar to the cream then beat until stiff. Top cooled pie with whipping cream. Slice and enjoy!
