A Million Recipes from Behind the Scenes

This summer I started developing recipes for Good Cook, the fabulously affordable kitcheware line you can find in many major grocery stores throughout the country. Since June, I’ve pulled together a bunch of fun recipes for their company and thought you might want to check them out, should you be looking for traditional. American fare for your next potluck or mid-summer party. (Like that BLT Salad on up there. Yumma. Try making it with facon and vegenaise for a vegan version!)
Speaking of, tomorrow the kids and I will don red, white, and blue regalia and attend the party of the century–an Olympic Party Kickoff thrown by Miss Amy Meeker, bestie extraordinaire. She’s planned a whole feast of British food, and has given ample warning to the guests that husband, MikeMeeker (yes, we say it as though it’s all one word, thankyoumuch), will insist that we stand and wave flags throughout the entire opening procession. She’s warned us he’ll weep tears of glory while we stuff our mouths with colcannon and drink Pimms No. 2 from paper cups.
I couldn’t be more in love with my people and their parties.
And now, a few offerings for your next party, should you not have time to pull together UK Festivities in time for the Opening Ceremonies….(no worries. If it weren’t for the Meekers, I might have gone and missed the entire Olympics.)

Chilled Watermelon Strawberry Soup. Lovely for a summer day, a summer night, and every summer everything in between.

Looking for a snappy side dish? This Pineapple Fried Rice takes all the work out of…well…everything, since I made it with that already-cooked rice you find in the freezer section. (Shhhh! Don’t tell!)

Feisty Firework Chicken. May just be patriotic enough to join the Meekers Olympic Party. But probably not.

Favorite Olympic moment – Michael Phelps winning all of those medals but I can’t remember how many and when it was. What was more memorable was his mom’s reaction. :)

Magnificent Seven winning the gold for the US in ’96! They were my first Olympics – I was just barely six and that year I fell in love with Olympic gymnastics, thanks to our amazing team!

First, the party turned out great! Thanks to my homegirls who helped prep and brought their enthusiasm and party ready attitudes. Made for such a fun night!
My favorite Olympic moment is Kerry Strug on the vault with a messed up ankle. She totally played through the pain and our girls won gold. It was such a girl power moment and represents to me what the Olympics should be about.
