I once hid my daughters boo-boo, her mangy pink blanket which inspired her nightly thumbsucking routine. I told her the washing machine must have swallowed it, and tucked it silently into a thrift-store-bound bag. That’s just how mom’s have to roll sometimes.
Thankfully, I don’t have to go all stealth on my pasta, since Heartland Pasta has already done the hiding for me! A package of their Hidden Vegetable Pasta arrived on my doorstep last week, and the kids were immediately thrilled. They rather love pasta in any form. And this pasta makes a win-win for all of us. The kids get their noodles, and I get to know there’s a full serving of veggies in every 100 grams of pasta.
With a mixture of sweet corn, carrots, and squash blended into Heartland’s Hidden Vegetable Pasta, you’d think there’d be something funky about the flavor. But, there’s nary a hint of untraditional flavor. The pasta pair perfectly with all your favorite dishes, everything you’ve already used traditional pasta for, you can make with the Hidden Vegetable Pastas without worrying about any sort of flavor or texture change.
Of course, if you’re like me, old recipes are nice, but new recipes are nicer. So, I whipped up a quick and simple pasta tonight, using Heartland Elbow Mac. Rather than taking time to pull together a roux for a cream-based sauce, I simply melted goat cheese all around smoked sundried tomatoes, rotisserie chicken, and fresh chopped basil.
The result? Yummy city. The kids gobbled it up, and I got down Gangham Style on the floor. Because that’s just how we moms roll sometimes.
Heartland Creamy Chicken & Goat Cheese Pasta

This may be the simplest creamy pasta meal ever. Goat cheese coats hot pasta and smothers itself all over smoked sundried tomatoes, chicken, and fresh basil. The best part? When made with Heartland pasta, your family isn't just enjoying a great meal, they're enjoying a full serving of veggies hidden right inside your noodles!
12 ounces Heartland Elbow Macaroni
1 tablespoon olive oil
1 clove garlic, finely chopped
4 ounces goat cheese
1/4 cup milk or unsweetened almond milk
1/2 cup chopped smoked sundried tomatoes
1 cup rotisserie chicken, chopped
1 cup chopped basil
salt and pepper to taste
In a large pot, boil Heartland Elbow Macaroni according to package directions. Drain cooked pasta in a strainer, and return pot to stove. Over medium, drizzle olive oil into pot, then add garlic. Cook for 30-60 seconds then add goat cheese and milk. Remove from heat, add pasta, sundried tomatoes, chicken, and basil. Toss to mix. Salt and pepper to taste.
