Easy Cheesy Primal Breakfast Box

When it comes to cutting carbs, breakfast quickly becomes the most uninspired meal ever invented. I mean, what is a morning without pancakes or waffles or french toast? (Should I have capitalized the French in french toast?) In the words of Kermit the Wheat Kernel…it’s not easy being grain.

Since my Main Man Steve is often up and out the door early, I started putting together lil’ ol’ breakfast boxes for him to tote to work some mornings. As if prepping semi-exciting, unsoggy breakfast boxes isn’t challenge enough, adding the extra complication of low-carbage makes for some long hours standing confusedly in the produce section at the market. Thankfully, if you stand and stare long enough, scrumptious breakfast box ideas begin to take form, and before you know it, you’re packing this fun (and simple!) dish and sending it off with a kiss.

One of the things I love about this breakfast box is…it’s not overly moist (ewww, hate the word moist…) so you can pop little instructions and secret notes inside the container.

So, here’s what went into the Brekkie Boxes…

  • Pink Grapefruit Slices
  • 2 hard-boiled eggs
  • Bread Cheese or Halloumi (if you’re eating dairy free, pop some salmon or thinly sliced grilled chicken breast in there.)
  • Walnuts & Dried Cranberries and Cherries drenched in raw honey
The boxes were sent with instructions to heat the cheese slightly, top it with the honey-walnut-cranberry mixture, then enjoy the tarnations out of the morning.

Word on the street is, the Main Man did just that.
