Thanksgiving is nine days away, and I can already feel my blood pressure rising.
There’s just so much to do. A whole list to shop for. Linens to iron. Clean sheets to stretch over beds. I’m staring down the days between now and next Thursday and wondering how I’m going to get it all done.
Which is why I’m also putting plans in place for an entire post-Thanksgiving weekend of nothingness. Days of laying around and melting into movies. Hours of running wet canyon trails. Fingers unlifted over cooking.
Knowing there’ll be a fridge full of good stuff, I’m pulling together favorite easy leftover eats, so the family can be fed whilst I run away and hide in my happy cave.
Ohhh, happy caves. Now THAT is something to be grateful for.

Lazy Turkey Leftover Pot Pie
1 sheet puffed pastry dough, cut into 4 squares and baked until golden brown
1 1/2 cups turkey, chopped
1 cup gravy
1 cup green bean casserole
1/2 cup frozen carrots
salt and pepper to taste
Place puffed pastry squares on a plate.
In a large skillet, heat turkey, gravy, green bean casserole, and carrots together until hot. Use a ladle to crack a small hole in the center of each puffed pastry, fill with turkey mixture. Serve and enjoy!
