Sneaky Green Superfood Smoothie

Leprechauns aren’t the only ones being sneaky this time of year! Smart mamas and savvy eaters can sneak a few fun veggies into their meals and make a St. Patty’s snack that’s as scrumptious as it is healthy!

The secret? A fun new concept from Green Giant. Working with Jessica Seinfeld, author of Deceptively Delicious, they created Veggie Blend-In’s–premade packets of carrot puree, butternut squash puree, and spinach puree. All zipped up pretty and ready to be put into everything from brownies to pasta to St. Patty’s Day smoothies.

Here’s the box you’ll be looking for. See that 100% Vegetable Puree sign? I saw it and was feeling a bit dubious.

100% vegetables? Reaallllllly?

Where’s the preservatives?

Where’s the additives?

Where’s the food coloring?

Ingredient list proves to be exactly what the product claims. Veggies, pure and undefiled.

The box (and Jessica’s book) comes with recipes you can make throughout the whole day. But, today I whipped up a smoothie. Because it’s practically Spring, it’s practically St. Patty’s Day, and I like easy things.

The best part? This here little smoothie looks festive, but it’s also full of superfoods. Spinach, almonds, avocado, bananas. Sounds like a strange combo? You gotta try it! Even my kids approved this recipe with a serious thumbs up.

So much sipping today. So much sneaking to celebrate.

Sneaky Green Superfood Smoothie

Yield: 4 servings

Prep Time: 5 minutes

Total Time: 5 minutes

Treat yourself to something that tastes as good as it is! This sneaky superfood smoothie is packed with spinach, bananas, avocado, almond butter, yogurt, and a pinch of mint. It yeilds a mild, deliciously sweet tropical flavor and is so fun to sip!

Ingredients:

1 pouch Green Giant Veggie Blend-Ins Spinach
2 ripe bananas, frozen
1/2 avocado
1/2 cup pineapple yogurt
1 tablespoon raw almond butter
1/4 cup loosely packed fresh mint

Directions:

Place all ingredients in an industrial-strength blender. Blend until pureed.

To rim your smoothies in sprinkles, heat 1/4 cup of white chocolate chips (or green candy melts), dip the top of the glass in the melted chips, then dip in sprinkles. Allow to harden before pouring smoothie in the glass!

    I generally stay away from smoothies (I know not the healthiest), they taste weird to me. But this one that I might try.
