When you need a totally brilliant appetizer, or like, instant dessert. I got chew.
Inspired by this beautiful idea for Blueberry Cheesecake Bites from Gimme Some Oven, I pulled some of my favorite little almond crack cookies (aka Jules Destroopers) outta the pantry, topped them with creamy mascarpone, and had a heydey with blueberries and honey.
It was really as exciting as it sounds.
Endlessly and eternally a last-minute party planner, ideas such as this are my lifeblood. Quick, simple and so good, you just keep saying why-didn't-I-think-of-that while grabbing for another one. And another one.
And another one.
And, yes. I ate about 278462. Because blueberries are good for you, guys.
Note to you: the mascarpone and honey soften the crackers pretty quickly. So don't try making this treat more than a few minutes before serving. If you're prepping it for a party, I'd definitely suggest a sturdier cracker, like a square of shortbread or other such stable foundation. And even then, still plan on serving within a few minutes.
The good news: these babies are so easy to whip up, you can greet your guests AND make an appetizer/treat/dessert/yummo all at the same time.

5-Minute Blueberry Mascarpone Bites
8-12 servings | 5 minutes
- 4 oz mascarpone cheese (or whipped cream cheese)
- 1 box almond thins, graham crackers or shortbread cookies
- 1 pint blueberries or raspberries
- 1/2 cup raw honey
Spread mascarpone on cookies. Top with blueberries, drizzle with raw honey. If desired, garnish with mint. Enjoy immediately. Or set out all ingredients, so guests can make their own.
