Peppermint extract would work just fine! Enjoy!<br /><br />Marit: For the buttercream, just use a fork and clean hands to mix it together. Our cookies stayed fresh outside of the fridge for 4 days. If you put them in the fridge, I imagine they&#39;d be good for at least a week. Freezer? Probably 1-2 months.<br />I&#39;ve typed the recipe exactly as I created it, which is the very way I made it in my own kitchen. The buttercream topping is neither stodgy nor buttery. It&#39;s divine. A perfect topping for this delightsome cookie!
