I even sent my sister the link &amp;amp; told her she was going to make it for me.&lt;br /&gt;&lt;br /&gt;About a month ago I sent her a reminder.  Last week I printed off the recipe, even figuring in the altitude adjustments for her.  Just tonight I made up the shopping list to be sure she has all the ingredients, and tomorrow I&amp;#39;ll go to Trader Joe&amp;#39;s and pick up what we still need.&lt;br /&gt;&lt;br /&gt;Because this Sunday?  I&amp;#39;M EATING THIS CAKE.  A LOT OF IT.  And I CANNOT wait!&lt;br /&gt;&lt;br /&gt;Nine long months... No problems (well except for my small town not having marscapone cheese and having to call a friend in the big city to bring me some.)  The cake was so rich, I made all of my friends take a piece home so that it would not be in the house.&lt;br /&gt;&lt;br /&gt;Being so rich, this cake will easily feed 12 people. My cakes...</title><content type='html'>I had the same problem as another reader. My cakes came out os the oven fairly level, but both layers quickly sank in the middle while cooling.  What would cause this?  Also, my frosting was to thin, almost pourable.  Did I not let the chocalet and cream chill long enough?  It did taste great, but I would like to know how to fix the problems I had.   One another thing, I think the olive oil taste is pretty strong.  Can I use a lighter oil? Why is that? Is my over cooking too hot? I did double the baking powder because I am at around 750 ft elevation. Maybe my baking powder is not good?&lt;br /&gt;&lt;br /&gt;The cake was still yummy and I just filled the hole with a no bake cheesecake mixture then the Mousse and the frosting. It was soooo yummy! At the grocery store they had 2 options for mascarpone.  Tiramisu Mascarpone (which has coffee in it, but specified that it was for chocolate cakes and stuff...) or regular mascarpone, which specified that it was for dips and spreads.  Which kind should I use?  I bought the regular kind, no thanks on the coffee. It still tastes amazing, &amp;amp; as I mentioned, my kids never have a problem with leftover frosting!  It set up well in the fridge, but it just wasn&amp;#39;t quite as spreadable as I&amp;#39;m used to w/ buttercreams.  My butter may have been a bit over-softened, as well, but I&amp;#39;ll probably get a chance to try it again next month when my 3rd child turns 4!  &lt;br /&gt;&lt;br /&gt;Thank you again for this amazing recipe, &amp;amp; for your guidance. Thank you so much for your question.&lt;br /&gt;&lt;br /&gt;First off, I&amp;#39;m tickled the cake turned out for you.  We here devoured every slice &amp;amp; my hubby who is anti-chocolate was divinely in love with the recipe.  Yummaroo.&lt;br /&gt;&lt;br /&gt;As for the frosting, you don&amp;#39;t want to boil the chocolate and cream.  Just stir it until it&amp;#39;s melted together and pudding-y then place it in the fridge to cool.  It should harden up nicely.  Then, you remove it from the fridge and beat in the butter and powdered sugar.  &lt;br /&gt;&lt;br /&gt;One thing I ought to note is ganache is LARGELY affected by the quality of chocolate you use, so definitely don&amp;#39;t scrimp.  I used Ghirradeli&amp;#39;s cacao bittersweet chips.  They&amp;#39;re fat and smooth and make a beautiful (and delectable) frosting.&lt;br /&gt;&lt;br /&gt;Hope that helps! The flavor is wonderful, but the consistency was a bit more like an over-thickened pudding than a spreadable frosting.  When cooking the cream &amp;amp; chocolate together to make a &amp;quot;thick ganache&amp;quot;, should it be boiling?  Mine had just started to boil when I remeoved it from the heat, but despite adding an extra cup of powdered sugar, (over the max suggested), it never became quite spreadable.
