Apple Blueberry Donuts

Ingredients:

1 ½ cup Flour

1 ½ tsp Baking powder

½ tsp. baking soda

¾ cup Light brown sugar, packed

2 Large eggs

¾ cup Buttermilk

3 tbsp Unsalted butter (Melted)

1 cup Pureed Blueberries (1 cup fresh blueberries)

1 tsp Pure vanilla extract

1 tsp Apple pie spice

1 Disposable piping bag

Directions :

Step 1. Preheat oven to 350 degrees and spay a doughnut pan with pam baking spray.

Step 2. Using a food processor or blender, puree the 1 C of blueberries and set aside.

Step 3. Using a medium bowl, whisk together the flour, baking powder, baking soda, and apple pie spice.

Step 4. Using a large bowl, whisk together the eggs, sugar, buttermilk, melted butter and vanilla.

Step 5. Gradually whisk in the dry ingredients into the wet until combined. Fold in the pureed blueberries.

Step 6. Scoop the batter into the piping bag. Fill the doughnut cavity with the batter.

Step 7. Bake in the oven for 11-13 minutes or until a light golden brown. Remove from oven and allow to cool.

Step 8. Remove the doughnuts from the pan and place onto a wire rack.

Streusel Topping:

12 tbsp unsalted butter (Softened)

⅔ cup Sugar

1 ½ cup Flour

Directions:

Step 1. Combine all ingredients into a medium bowl.

Step 2. Using your finger, work the mixture into a coarse like crumble. Set aside.

Vanilla glaze :

1 cup Powdered Sugar

2-3 tbsp whole milk

2 tsp vanilla extract

Directions:

Step 1. Using a medium bowl, whisk all ingredients until combined.

Directions for the doughnuts:

Step 1. Dip the top of the doughnut into the glaze and place onto the wire rack.

Step 2. Sprinkle some streusel on top. Enjoy!
